Chocolate-Berry Ice Cream

I've been quite busy over the past month, so I haven't blogged. I actually have about five minutes of free time right now, so I absolutely must post this. THIS is one of the most divine little things I've ever concocted. I'm actually not going to write much more, instead I'll post pictures :)
My goodness. Behold the beauty.

Chocolate Raspberry Blueberry Coconut Ice Cream

100g frozen raspberries
100g frozen blueberries
60g pure coconut cream
60g non-dairy milk
sweetener, if desired (about 7 drops stevia or 1 tsp caster sugar)
1 tbsp cacao nibs and 1 tbsp chocolate-nut butter (recipe coming soon!) to top

Blend first five ingredients on High, setting 10 in Vitamix, until completely smooth, pushing down with tamper to ensure there are no chunky bits (unless you like that). Scoop out into extra-large cereal bowl and top with cacao nibs and chocolate-nut butter. Eat and marvel at the deliciousness.

This looks a little funny scooped out, but the colour is so gorgeous, no? Note jar of chocolate-nut butter and bag of cacao nibs in background.



For next time: I've actually been experimenting with loads of chocolate-nut butters in the past month. Expect to see recipes for: chocolate-macadamia butter, chocolate-hazelnut butter, chocolate-cashew butter and chocolate-almond butter. Also cashew-almond butter. ARE YOU EXCITED? :D
